Ingredients
1 pound
Chicken breast (cut into pieces)
2 tablespoons
Olive or avocado oil (divided)
1/2 cup
Onion (chopped)
3/4 cup
Kumquats (sliced & seeds removed)
2 cloves
Garlic (minced)
3/4 teaspoon
Fresh grated ginger
1/2 teaspoon
Crushed red pepper
1/8 teaspoon
Black pepper
1/3 cup
Brown sugar
1/4 cup
Soy sauce or coconut aminos
For serving
Rice
Steamed broccoli
Sesame seeds for garnish
Step by Step Instructions
- Cut the chicken into bite sized pieces and season them with salt the night before preparation.
- Heat a cast iron skillet over medium heat, add 1 tablespoon of oil and cook the chicken pieces until they reach an internal temperature of 165. Set the pieces aside.
- Add the remaining oil to the skillet and cook the onion for 3 minutes. Add the kumquats and cook for 5 more.
- Add the garlic, ginger, crushed red pepper, and the black pepper to the skillet and cook for 1 minute before stirring in the brown sugar and soy sauce/coconut
- Let the mixture cook until the sauce thickens, then stir the cooked chicken pieces into the sauce to heat and coat.
- Serve the chicken with rice and steamed broccoli, and if desired garnish with sesame seeds.
